Inspired Friday: Pumpkin Pickin’

As I’ve read articles and looked for recipes and ideas lately, everything seems to have one trend: pumpkin.  Pumpkins, pumpkins everywhere.  Pumpkin bread, pumpkin pie, pumpkin decorating, pumpkin cream cheese!

The first is from SeeBrookeCook.com – an enticing and mouthwatering looking recipe for pumpkin cream cheese muffins.  I can’t wait to try these out – they look delicious!

Next up, is just straight up pumpkin bread – with a nice vegan twist: no fat because there is no milk used! This is from a great blog called New Nostalgia, which has a ton of great recipes for healthy eating:

Next up is an actual recipe for pumpkin cream cheese.  I’m a fan of flavored cream cheeses, so I’m interested to try this one out.  This one comes by way of www.laaloosh.com and it sounds great!

Lastly, the one place I’ve been seeing pumpkin is every single Dunkin’ Donuts/Starbucks/coffee place around.  Apparently, the Pumpkin Spiced Latte is THE drink of the season, and as a tea drinker, I feel like I’m totally missing out! Booo! No fair!  Thank goodness a Google search for something like it led me to Cookiesandcups.com and their yummy looking pumpkin hot chocolate! Woot, woot! I’m not left out anymore of the hot-beverage-pumpkin movement!

I’m planning on trying a couple of these out – as they all have me craving baked pumpkin goods. I’ve made my shopping list for the ingredients as I typed this post!

Anyone else feel inspired? If so, let me know how they all turned out!

*UPDATE: The first recipe, for the Pumpkin Cream Cheese Muffins were delicious! I made the run to the grocery store, bought the ingredients, and they taste as great as they look!  I recommend them!  Yum yum!

    Yes, I have to agree with you everything is Pumpkin these days. I was at a fair and heard there was delicious homemade ice-cream and thought I would give in to my sweet tooth. I found the gentleman making the ice cream and to my disappointment it was not chocolate ( my favorite and not even vanilla) but you got it PUMPKIN. I did try it. And it was not what I expected. It was not an over powering flavor. It was good but didn’t fill my craving? The maker of this ice-cream said it was the first time they made it and even he was surprised by it’s taste. He doesn’t like pumpkin usually. For my taste I thought it needed some chocolate chips.

      Haha – yes, everything is much better with chocolate chips.
